The Story of Santouka

Santouka came into being because of a single announcement by founder Hatakenaka to his family.
"I'm going to make delicious ramen."

Especially made for families.
That is the beginning of Hokkaido Ramen Santouka.

The moment you put it in your mouth a gentle flavor will spread throughout and a little later it will change into a rich and delicious taste.
It was in the 1980s that Santouka took its first steps toward dominating the world and began to draw attention with its shio ramen served with a small, pickled plum in a unique round bowl.
Santouka started its history when founder Hitoshi Hatanaka said to his family.
"I'm going to make delicious ramen."

Under the original production method, the white tonkotsu (pork bone) soup was produced from repeated trial, error, and improvements. It has a mild, gentle flavor and was dedicated it to be delicious to the last drop.
The company was founded in March 1988, a mere four months after that soup received rave reviews from Hatanaka's family for its amazing quality.

It started with a single restaurant in Asahikawa, Hokkaido.
The restaurant had nine seats and a single item on the menu: shio (salt) ramen.

This was the beginning of Hokkaido Ramen Santouka.

This is the wish of the founder,
part of every small bowl of ramen.

The donburi (ramen bowl) of Hokkaido Ramen Santouka was specially ordered by our founder.
Since they have a thickness that prevents the soup from cooling, the aroma and delicious flavor remain intact until the moment when the customer lifts a spoonful of soup to his mouth. The unusual color of the donburi, remains beloved today by many customers as a symbol of Hokkaido Ramen Santouka.

Moreover, in order to create a mild tasting soup, we have boiled pork bones for long time.
When the white colored soup is complete, we do not re-boil them to protect its taste and smell.

Therefore, you may not find the soup to be very hot. But we believe that it is the right temperature to taste from children to elders.

While keeping in mind that our soup should be ‘able to enjoy until the very last drop,’ with the right amount of salt, we have brought out the best of the ingredients for the soup.
The mild tasting soup has not changed its taste since its beginning.

Santouka's soup is made by hand from scratch at all its restaurants, both in Japan and abroad.
The reason why we stick to our ingredients and production method is to serve ‘Family friendly, delicious, and healthy ramen.’That is why we use minimal salt.

Like food parents give their children, we strive and pour our love into our ramen. In keeping with the spirit of Santouka at the time of its founding, we aim to be a ramen restaurant that will be loved forever by people around the world. We will never stop delivering our consistent flavor.
